  • 3/4 cup sugar
  • 1 tablespoon grated fresh lemon rind
  • 2 large eggs
  • 2/3 cup fresh lemon juice
  • 2 tablespoons butter or 2 tablespoons margarine
  • 1 18 ounce package refrigerated sugar cookie dough
  • 2 tablespoons seedless raspberry jam, melted
  • 2 cups fresh raspberries
  • 2 cups blackberries
  • 1 cup sliced strawberries
  • 1 plum, sliced
  • 2 teaspoons sugar

  1. To make lemon curd: Combine the first three ingredients in a saucepan over medium heat, stirring with a whisk until sugar dissolves and mixture is light in color (3 mins). Stir in lemon juice and butter; cook until mixture thinly coats the back of a spoon (5 mins), stirring constantly with a whisk. Let the mixture cool

  2. Cover and chill (the mixture will thicken as it cools). This makes 1 1/3 cup so just freeze what you don’t use for this recipe.

  3. Preheat oven to 350 F. Press dough into a 12 inch pizza pan coated with cooking spray.

  4. Bake for 12 minutes or until golden brown. Cool completely.

  5. Preheat broiler. Spread jam over crust, and spread lemon curd over jam. Arrange raspberries, blackberries, strawberry slices, and plum slices on top. Sprinkle sugar over the top and broil for 3 minutes.

More about your specialty pizza...

Although everyone loves traditional pepperoni as a topping, it can be fun to spice up your pizza using unusual and unexpected ingredients. It is obviously an incredibly versatile food, so you have plenty of freedom to choose your toppings, cheese, and sauce. The great thing about it is that it is easy to tailor it to the needs of your guests.

Meat lovers will love a barbecue chicken pie with cheddar cheese instead of the traditional mozzarella. For a unique vegetarian pie, try adding zucchini, eggplant, roasted red peppers, feta cheese, and olive oil. Or you could even try a dessert themed pizza, using a cinnamon glaze for the sauce and topped with apples and pears.

We strive to bring you the best recipes, no matter what kind of unique toppings you choose. We hope that you enjoy all of the recipes that you find on this site and that you will continue to visit pizzamenu.com for all of your pizza making needs.
