Supreme Veggie Pizza
- 1 prepared pizza crust
- ¼ c black olives
- 1 large orange bell pepper
- 1 large tomato
- 1 red onion
- 1 medium sized zucchini
- 4 oz fresh mushrooms
- 1/4 c fresh basil leaves
- pizza sauce or tomato paste
- 1 1/4 c fresh mozzarella, grated
- 1/2 c feta cheese, crumbled
Prepare the vegetables first. Cut the olives in half, or chop them if you want them to be smaller pieces. Cut the bell pepper into thin slices. Chop or slice the onion, and cut the tomato into slices. Cut the zucchini into thin slices, and slice the mushrooms as well. At this point you can sautee all of the vegetables except the olive and tomato in a pan with a bit of olive oil if you wish, or you can just leave them raw.
Get out your pizza crust and take a look at the instructions for it. If the pizza crust that you’ve bought says to pre-bake it, follow the instructions for prebaking. If not, preheat the oven to 450 degrees Fahrenheit.
Once the pizza is pre-baked (if required), spread the pizza sauce or tomato paste over the top of your pizza. Next, spread the vegetables except the tomatoes and basil evenly across the pizza sauce.
Next, top your vegetables with the tomato slice and the whole basil leaves. Crumble the feta cheese on top of this mixture. Finally, cover the vegetables, tomato, basil, and feta cheese with mozzarella cheese. Sprinkle the top of the pizza with a bit of salt and pepper if you want to do that.
Bake the pizza at 450 degrees Fahrenheit for around 10 to 12 minutes or until the cheese is melted, bubbling, and starting to get brown in a few spots.
