Pepperoni and Mushroom Pizza
- 2 cups thinly sliced crimini mushrooms
- Pre-made pizza dough
- 4 teaspoons olive oil
- ½ cup pizza sauce
- 1 1/2 cups (6 ounces) shredded part-skim mozzarella cheese
- 2 tablespoons grated fresh Parmesan cheese
- 2 ounces sliced pepperoni
Put your oven rack in the middle of the oven. Place another rack in the lowest setting of the oven, and the bottom rack. Place a rimless baking sheet on the bottom rack. With the rimless sheet on the bottom rack, preheat the oven to 500° F.
Turn a burner of your oven to medium-high heat, and place a skillet on top of it. Heat two of the teaspoons of the olive oil in the pan and add the sliced mushrooms. Saute your mushrooms for about 7-10 minutes or until the water that comes out of the mushrooms has evaporated.
Take a pre-made pizza dough and spread it out to the shape you want your pizza to be. Brush the remaining two teaspoons of olive oil over the dough. Pre-bake the dough on the pre-heated rimless baking sheet if the instructions on the package of the dough direct you to do so. Remove from oven.
Add some extra spices to your prepared pizza sauce if you desire to do so. This can give the sauce a bit of extra flavor. Spread your pizza sauce in an even layer over the crust, leaving a small border around the edge for the crust to brown. Top the sauce with the mushrooms and the sliced pepperoni. Top the mushrooms and pepperoni with the mozzarella cheese, followed finally by the parmesan cheese. Bake the pizza on the middle rack for another 10 minutes or until your crust is turning brown and the cheese is bubbling and totally melted. Cut into 8 to 10 pieces, depending on how hungry everyone in your party is!
