Cauliflower Crust Pizza

  • 1 half a large head cauliflower
  • 1 large egg
  • 1 1/4 cups shredded mozzarella cheese
  • 2 tablespoons grated parmesan cheese
  • 1/4 cup tomato sauce
  • 1 cup grape tomatoes, sliced in half
  • 2 cloves garlic, minced
  • 1/4 teaspoon crushed red pepper flakes
  • Fresh basil leaves
  • Salt and freshly ground black pepper


  1. Preheat oven to 425ºF.

  2. Grate the cauliflower until you have two cups of grated cauliflower. Place in a large microwave safe bowl and microwave for about six minutes, or until soft and squishy. Allow to cool for around 10 minutes.

  3. While the cauliflower is cooling, beat one egg until smooth.  Mix in the egg, one cup mozzarella, parmesan cheese, and salt and pepper with the cauliflower. Once combined, form into a round pizza crust with your hands or with the assistance of a rolling pin.  Place onto a greased cookie sheet. Bake pizza dough for 10 to 15 minutes, or until golden.

  4. Remove the dough from the oven.  Top the pizza dough with the pizza sauce, followed by the grape tomatoes, garlic, and red pepper flakes. Sprinkle the mozzarella cheese on top of the pizza topping.  Place pizza in the oven again, and bake until the cheese is melted and starting to brown, about another 10 minutes. Sprinkle with basil and serve to your family and friends.
